You read the title and thought, “um…Christin, what on earth are you smoking”, didn’t you? Well hold your horses because these  are amazing. I get it. It sounds weird, tastes really, really good. Unless you hate melon, mint, cilantro or lime of those things.  Then you shouldn’t even bother with this recipe. But you should keep reading and comment and tell me how much I suck. I really love those comments. People be sippin’ on that haterade.

They’re green which in my book automatically equals healthy. It should mean the same in your book. I’ll give you a second to go ahead and adjust that accordingly.

In addition to these tasting really good, they’re pretty low in sugar and really easy to make. Anything that’s easy pretty much gets my seal of approval. Says the girl who makes ice cream from scratch. I get it, it seems weird. But easy is nice, too guys. Also, since these pops don’t have a ton of sugar in them and a lot of flavor, I would suggest doing the following…

Put them in a jar, add some rum or tequila and top with some club soda. That would be ah-mazing. These Unfortunately, I’m on the wagon right now and not drinking a ton that’s why the scene above is staged. Also, because it was around 10am when I took these pictures.

MELON POPS WITH MINT, CILANTRO and LIME – makes 10
1 small honeydew melon
3/4 cup fresh mint
1/4 cup fresh cilantro
juice from 2 1/2 limes
1/4 cup sugar

Place all ingredients into blender and blend until smooth. Let sit a bit so the sugar can dissolve. I stirred it occasionally. Once the sugar is dissolved pour into molds. I let mine freeze for an hour before I put the sticks in and then froze overnight. Boom! Now you have some delicious pops. You. Are. Welcome.
