old fashioned pancakes

Guys, my “t” key keeps popping off. Other than being really annoying I have noticed that the “t” is a key you use a lot. Who knew?

I have two items in the kitchen that are my kryptonite; caramel and pancakes. I can make paleo pancakes like it’s my job, but regular pancakes? I screw them up every time. I don’t even want to talk about caramel. I hope to conquer that bitch shortly.

Fresh off the plane from California, I resolved to make pancakes my bitch. I looked up a ton of recipes and didn’t like any of them so I decided to add a little of this and a little of that and I would see what happened. Obviously, if I screwed them up, it would just be another day in the kitchen with pancakes.

I can’t believe this, but I did it. I made pancakes and they didn’t suck. In fact, they were really, really good.

So moist and fluffy and covered in maple syrup. They were amazing and not paleo. Whatever.

Old Fashioned Pancakes

  • 1 cup flour
  • 3 teaspoons baking soda
  • 1/8 teaspoon salt
  • 1 egg
  • 1 ¼ cups milk
  • 3 tablespoons butter, melted

Add dry ingredients to a bowl and sift twice. This is no joke, there will be NO lumps. Create a crater in the middle of the dry ingredients and add the egg, milk and melted butter. Mix to combine. Be sure not to overmix. Just take it easy, okay?

Add the batter to a pan over medium heat and flip when you see bubbles in the batter. Cook until browned on the other side. Serve with real maple syrup. Do not buy that shit made with sugar, it is not right.
