fudgy brownies

Looking back on it, I do remember saying something about not posting anymore brownie recipes but this is different. I swear! I swear on my life and my “polite as f*ck” t-shirt. This recipe is basically healthy. It’s grain free, nut free, dairy free and, you guessed it, paleo. I’m not going to bs you and say they taste like my amazeballs brownies, because they don’t. You can tell they don’t have an Escalade-sized amount of sugar in them and consequently, you can tell that maybe they aren’t totally terrible for you.

So yes, this is a “paleo” dessert which I fully admit is a bit of an oxymoron. But sometimes you just want a treat and I would rather eat something like this than go buckwild on a pint of Ben & Jerry’s.

What I also love about this recipe? It’s very, very easy and it only has a few ingredients.

FUDGY PALEO BROWNIES (adapted from Practical Paleo)

4 ounces of bittersweet chocolate melted
3 eggs
1/2 cup coconut oil (melted)
1/2 cup pure maple syrup (grade B)
1/2 cup unsweetened cocoa powder
2 tablespoons fine coffee grounds
2 tablespoons strong coffee
pinch of salt

Preheat oven to 375° F.

In a medium bowl combine melted chocolate, oil, maple syrup, coffee and coffee grounds. Sift the cocoa powder over the wet ingredients to be sure there are no clumps. Add eggs and whisk evenly.

Line the bottom of a 8×8 (or 9×9) pan with parchment paper and add batter. Cook for 30 minutes or until a toothpick inserted in the center comes out clean.
